Why Rinsing Strawberries Under Tap Water Isn’t Enough - and the Bicarbonate of Soda Bath That Works

During strawberry season, the red fruit ends up in almost every home. They look fresh, smell sweet and, after a quick rinse, seem perfectly safe. Yet modern residue testing shows that strawberries are among the more heavily contaminated fruits - and that a few seconds under the tap leaves the key substances largely untouched.

Why strawberries are so often contaminated with residues

Strawberries have featured for years in international rankings of fruit with the highest number of detectable residues. Assessments by authorities such as the US USDA and evaluations by organisations like the EWG point to the same pattern: a large share of conventionally grown strawberries carry several different molecules on their surface.

In some test series, laboratories found at least one residue in 99% of samples analysed. Around a third of the fruit contained ten or more different substances, and individual samples showed up to 23. Across the analyses, more than 80 different substances appeared in varying combinations.

Commonly detected examples include:

  • Carbendazim - an active ingredient from the fungicide group, often found as a residue on a portion of samples
  • Bifenthrin - an insecticide identified in many analyses on a relevant share of the fruit

For consumers, that means the glossy exterior can conceal a chemical mix that is invisible to the naked eye.

Why plain water alone makes little difference

Many people rely on the quickest routine: strawberries into a colander, briefly under the tap, a few seconds turning them - done. This does remove loose soil and dust, but it misses what worries most people: residues that cling to the fruit.

The explanation comes down to the chemistry of modern crop-protection products. Many are deliberately designed so rain does not simply wash them away. Some are lipophilic (fat-loving) and bind to the waxy layer of the skin. Tap water tends to bead up and run off, rather than carrying the molecules away.

Studies, including work from a US university, indicate that plain tap water removes on average only around 10 to 20% of detected residues - mainly those that are already readily water-soluble. So even if you keep the water running a bit longer, it still cannot be described as thorough protection.

A common mistake: removing the stalk before washing

A second, equally widespread habit can actually make things worse: cutting off the green stalk first and then washing. Doing so opens the fruit at the top, leaving the inside exposed.

If water and any substances stuck to the surface then enter through that opening into the soft interior, they are extremely difficult to remove afterwards. This is why specialists advise washing strawberries whole and only removing the stalk after cleaning.

The more effective option: a strawberry bath with bicarbonate of soda

A bath in a solution made with bicarbonate of soda (baking soda, food-grade bicarbonate) has proved particularly effective. Its pH is mildly alkaline, usually around 8 to 9. In that environment, certain molecules may partially break down or detach more easily from the surface.

Experiments on fruit show that soaking in a properly mixed bicarbonate solution lifts far more residues from the surface than water alone. In measurement series involving other fruits, up to 90% of residues on the skin were reduced after soaking times of up to 15 minutes.

Step-by-step: how to clean strawberries properly

For everyday use, a simple method works well - provided you do it consistently:

  1. Prepare a large bowl
    Pour about 1 litre of cold water into a suitably large bowl or pan.
  2. Stir in bicarbonate of soda
    Fully dissolve 1 heaped tablespoon of food-grade bicarbonate of soda in the water.
  3. Soak intact strawberries
    Place the fruit into the solution untrimmed and with the stalks still on. Add only as many as will fit without crushing them.
  4. Move them gently
    With your hand or a spoon, carefully turn the strawberries so all sides are wetted.
  5. Leave for 10 to 15 minutes
    Let the fruit sit in the solution undisturbed. This time window is crucial for the cleaning effect.
  6. Drain and briefly rinse
    Tip the strawberries into a colander, discard the solution, and rinse the fruit with cold water for about 30 seconds.
  7. Dry carefully
    Spread them on a clean tea towel and gently pat dry, or leave to air-dry.

How do vinegar, salt and other home remedies compare?

Alongside bicarbonate of soda, plenty of other tips circulate: vinegar water, salt water and special sprays. Comparative tests show clear differences.

Products such as washing-up liquid, all-purpose cleaners or other household detergents do not belong on food. They can leave their own residues behind - and those are not something you want on your plate either.

Moisture: the enemy of freshness

Another key point is shelf life. If you wash strawberries straight after buying them and put them back into the fridge while still damp, you risk them going mouldy much faster. The combination of moisture and sweetness creates ideal conditions for micro-organisms.

Better: wash strawberries only when you plan to eat or use them soon. For storage in the fridge, keep the fruit as dry as possible and loosely arranged, for example in a container with kitchen paper underneath.

Do you need to do this for organic strawberries too?

Many people choose organic in the hope that residues are no longer an issue. In practice, certified growers use different products and must meet stricter rules. Even so, analyses still find residues on organic produce from time to time - whether approved substances or traces from drift from neighbouring fields.

That is why the cleaning routine is essentially the same regardless of farming system. A bicarbonate solution bath followed by rinsing and drying reduces unwanted substances on the surface of organic strawberries too, while also removing dust, soil and germs.

How big is the risk really?

Taken one by one, many measured values remain within legal limits. However, specialists highlight two concerns: the mixture of many substances at once, and regular consumption over long periods. Children, in particular, often eat large amounts of strawberries during the season.

A consistent cleaning routine acts like an extra safety filter. It lowers intake of avoidable substances without having to give up the fruit itself. And once it becomes part of your routine, it is not particularly time-consuming.

Practical tips for everyday life

  • Where possible, buy strawberries in season and locally to keep transport distances shorter.
  • Discard any fruit with visible damage or mould immediately.
  • For children’s portions, use the bicarbonate bath consistently - especially when lots of strawberry yoghurt, quark or smoothies are being eaten.
  • The same applies for baking or freezing: clean thoroughly first, then process.

Anyone who wants to dig into the chemistry will come across terms such as lipophilic active ingredients, contact poisons or systemic agents. For day-to-day life, a pragmatic view is enough: residues largely sit on or right in the outer layer. The better that layer is loosened from the surface and rinsed away, the lower the load that ends up on the plate.

It is also worth considering other delicate fruits such as grapes, cherries or apples with very smooth skins. Many of the same effects apply: a quick rinse removes only the obvious dirt, while a structured soaking bath reduces a much larger share of substances that cling to the surface. Spending those extra minutes does not just feel more reassuring - it simply gives you cleaner fruit.
