Putting rice in the saucepan, adding water, dropping in a little bag, done - that’s how countless households have cooked for years. Now a Polish chemist with a large following on social media is challenging that routine. In her assessment, rice in a plastic cooking bag is not only more expensive, it may also bring microplastics and questionable chemicals onto your plate.

Why the expert warns against cooking bags

The discussion was sparked by a post from chemist Sylwia Panek. In a photo, she shows standard supermarket rice in a boil-in-the-bag pouch and suggests that anyone cooking it this way is making a mistake. Her central point: in boiling water, the plastic in the pouch is pushed to its limits, and tiny particles may detach and end up in the food.

"Rice in a cooking bag always means: hot water hits plastic directly - and that happens every time the pan is on the hob."

Panek stresses that one plate of rice is not the issue. What matters is the cumulative exposure. Anyone who has been cooking rice, millet, or other grains in plastic bags several times a week for years increases their personal burden of microplastics and certain additives used in the manufacture of packaging.

What’s behind microplastics in food?

Microplastics are tiny pieces of plastic, smaller than five millimetres - and often so small they are microscopic. You cannot see them, and you do not feel them in your mouth, but they do not simply vanish. Studies now detect such particles in drinking water, fish, sea salt, honey, and even in human blood.

With boil-in-the-bag rice, several elements come together:

  • The pouch is usually made from plastic films that soften at high temperatures.
  • Boiling water acts like an accelerator for chemical processes.
  • The longer the bag sits in the water, the more substances can leach out.
  • The rice grains sit directly against the film - there is no barrier.

The chemist points to recent research indicating that, under heat, the amount of released particles rises markedly. These tiny fragments can cling to the surface of the rice grains or enter the body along with the cooking water.

Hidden chemicals: Bisphenol A and plasticisers

Plastic is not made from a single base material alone. Manufacturers often add substances to make it flexible, heat-stable, or transparent. Two groups repeatedly come up in this debate: Bisphenol A (BPA) and certain plasticisers known as phthalates.

Both categories have been viewed critically for years because they can act in a hormone-like way in the body. This is exactly where the warning comes in: when the pouch floats in rapidly boiling water, small amounts of these substances may be released and then absorbed by the rice grains.

Any negative effects would not appear after a single meal. The concern is long-term exposure: small, repeated doses that add up in everyday life from a wide range of sources.

Rice in a bag is also poor value for money

Alongside the health question, the chemist raises a second point: cost. If you buy pre-portioned rice, you are paying not only for the grain, but also for the bag, the outer packaging, and the convenience of ready-made portions.

How to cook fluffy rice without plastic

A common argument in favour of the cooking bag is: “It always works - nothing can burn.” But switching does not require you to be a confident cook. With a few simple steps, loose rice can come out fluffy and separate.

Basic method for fluffy rice

  • Rinse the rice thoroughly in a sieve under cold water until the water runs clearer.
  • Put one cup of rice and about two cups of water into a saucepan.
  • Add a little salt, put the lid on, and bring to the boil.
  • Once it boils, turn the heat right down and simmer gently for 10–15 minutes.
  • Switch off the hob and leave the rice to stand for a further 5 minutes with the lid on.
  • Fluff with a fork - done.

Depending on the type (basmati rice, jasmine rice, wholegrain rice), the water quantity varies slightly. Many packs include useful guideline ratios. After two or three attempts, most people find the ideal texture - with no plastic bag involved.

Plastic pitfalls in everyday life - and how to reduce them

The warning about boil-in-the-bag rice is not an isolated point. Panek highlights how often hot foods come into contact with plastic in daily routines:

  • Kettles with plastic housings or plastic parts inside
  • Ready meals heated in the microwave in plastic containers
  • Takeaway coffee in disposable cups with plastic lining
  • Delivered food in thin plastic trays
  • Plastic lids on hot takeaway drinks

No single situation has to be dramatic on its own. But the total from all these contacts can increase the overall amount of substances that may enter the body. If you tackle one area - for instance, rice - you effortlessly remove one everyday source.

How can I recognise safer alternatives?

Not all packaging materials behave the same way. Checking the labelling can help. Many products carry symbols or notes such as “food-safe”, or logos showing a glass-and-fork icon. If you are using boiling-hot water, choose bags or containers that are explicitly approved for high temperatures - ideally not made from conventional plastic.

Practical everyday alternatives:

  • Loose rice and grains in paper or cardboard packaging
  • Storage in glass jars or stainless-steel containers
  • Cooking in a saucepan, or in a rice cooker with an inner pot made from stainless steel or ceramic
  • Reusable fabric bags when buying unpackaged foods

What does hormonal exposure actually mean?

When specialists talk about “disruptive chemicals” affecting the hormonal system, they mean substances that act like the body’s own hormones or block their effects. These include BPA and certain phthalates. They can influence hormone release, transport, or breakdown.

Discussed effects include:

  • Changes in metabolism and body weight
  • Fertility problems
  • Delayed or altered development in children
  • A possible influence on certain cancers, such as breast or prostate cancer

The evidence is not clear-cut on every point, and many studies are still ongoing. Even so, many professional bodies advise keeping exposure to such substances as low as reasonably possible - especially when very simple alternatives are available.

Why rice is so often in the spotlight

Rice is a staple food in many countries. Anyone who cooks Asian dishes frequently or relies on gluten-free side dishes may eat it several times a week. That is precisely why, from the chemist’s perspective, preparation is worth examining: what appears on the menu so regularly should be as clean and unaltered as possible.

There is also another factor: regardless of plastics, rice can already be contaminated with other substances, such as arsenic from the soil. Some nutrition experts therefore recommend washing rice well before cooking and boiling it in plenty of water, which you then drain off. Combined with plastic-free preparation, this can significantly reduce the overall load.

Once you switch to loose rice, you quickly notice that it barely takes any longer, the taste is often better - and the uneasy feeling of pouring boiling water straight onto a plastic sleeve disappears as well.
