Rice or kasha in handy portion pouches seems to end up in the trolley again and again: quick, tidy and supposedly foolproof. A Polish chemist with a large social-media following is now challenging that reassuring picture. Her warning is simple: when you boil those plastic pouches in vigorously bubbling water, microplastics - and with them unwanted chemicals - can move straight into your food. Done week after week for years, it can quietly add an extra health risk.

Why boil-in-bag rice can become a problem

The expert puts it bluntly: if you cook rice in a pouch, you are effectively cooking plastic as well. The pouch is usually made from a thin plastic film that sits directly against boiling water and the grains inside. That exact mix - high heat, direct contact and several minutes of exposure - makes it easier for tiny plastic fragments to be released.

The concern with cooking in plastic pouches is not limited to tiny plastic specks. The films often contain additional chemicals that make the material flexible, durable or clear. Two groups are especially discussed: bisphenol A (BPA) and phthalates (plasticisers).

When heated, these compounds can leach out more readily and migrate into food. That is exactly what can happen when a rice pouch floats in boiling water for 10 or 15 minutes and the grains absorb the liquid - along with whatever has dissolved into it.

  • Bisphenol A (BPA): Often used in plastics and coatings and can act like a hormone in the body.
  • Phthalates: Added to make plastics more flexible; suspected of affecting fertility and children’s development.
  • Other additives: Stabilisers, slip agents and colourants can partially leach out when exposed to heat.

These substances are classed as endocrine disruptors. They can interfere with the hormone system, including the thyroid, reproductive hormones and metabolic processes. If you regularly eat food exposed this way, your overall body burden increases noticeably.

Everyday life is already full of plastic sources

The cooking pouch is only one piece of a much larger puzzle. The chemist points out how often daily routines combine plastics with heat:

  • Boiling water in an electric kettle with a plastic jug
  • Heating food in the microwave in plastic trays
  • Takeaways and diet meal deliveries in disposable boxes
  • Coffee and tea “to go” in coated paper cups or plastic cups
  • Drinks bottles and lunchboxes made from cheap plastic

Each individual source may seem harmless. Together, however, they can create a constant background exposure. Reducing plastic contact in as many places as possible can significantly lower intake. Skipping boil-in-bag pouches is one of the easiest changes because it brings several benefits at once: less plastic, fewer chemicals and less waste.

Why loose rice is usually the better choice

Rice sold in larger packs - typically 1 kg or more - does not rely on individual portion pouches. It is often less heavily processed, which helps more of the grain’s natural nutrients remain. This includes minerals and some vitamins that sit mainly in the outer layers of the rice grain.

  • Bring water to the boil in a pan and lightly salt it. Rule of thumb: use about twice as much water as rice.
  • Stir in the rice, bring back to a brief boil, then turn the heat down low.
  • Simmer gently with the lid on and do not stir again. After 10–15 minutes the water will be absorbed.
  • Turn off the hob, leave the pan covered for five minutes, then fluff with a fork.

  • Rice cookers with a stainless-steel insert or ceramic coating
  • Metal sieves instead of plastic ones

With options like these, other grains such as millet, buckwheat or quinoa can also be cooked gently without plastic.

What microplastics may do in the body

Research into microplastics is progressing rapidly. What is already apparent is that these tiny particles can irritate tissue, trigger inflammatory processes and sometimes carry additional chemicals along with them. Early studies link higher exposures to cardiovascular disease and gut problems.

On top of that is the hormonal aspect linked to substances such as BPA and phthalates. These can bind to hormone receptors and disrupt natural signalling. Potential outcomes include cycle irregularities, reduced fertility, metabolic problems or altered development in children and teenagers.

How strongly someone is affected depends on many factors: how often contact happens, which plastics are involved, and the overall load from other sources. Because not every factor can be controlled, it makes sense to scrutinise habits that can be changed with minimal effort.

Practical tips for less plastic in cooking

If you want to reduce the risk from boil-in-bag pouches and other plastic sources, you can switch gradually. The most effective day-to-day levers are:

  • Buy rice, pasta and kasha only in loose form and cook them in a pan.
  • Heat hot water in a stainless-steel kettle or directly in a saucepan.
  • Reheat food in glass or porcelain, not in thin plastic tubs.
  • Take coffee and tea in your own reusable cup.
  • Choose sturdy storage containers made of glass, stainless steel or ceramic.

Staying cautious about new plastic kitchen gadgets and sticking with tried-and-tested materials can reduce microplastic intake quietly but consistently. Cooking rice without a plastic pouch is a surprisingly effective starting point - and a reminder of how much impact a small shopping choice can have on health and the environment.
