  • Don’t plan overly long storage times: weeks to a few months is fine, not several years.

For people trying to reduce plastic, foil can seem like the obvious alternative at first. A practical compromise is to use aluminium foil mainly as an extra outer layer - for example around a tub or bag to block odours or help the shape hold - rather than wrapping sensitive foods directly.

Food safety: what households should generally watch out for

Whatever you wrap food in, one thing remains crucial: hygiene and timing. Freezing stops bacteria from multiplying, but it does not eliminate them completely. If you freeze food that’s already starting to spoil, you won’t save it - you’ll just preserve the problem.

  • Cool leftovers down quickly; don’t leave them sitting at room temperature for hours.
  • Ideally freeze cooked foods within a day.
  • Don’t repeatedly defrost and refreeze frozen foods.
  • Plan defrosting in the fridge - not on the worktop in summer heat.

Particularly with meat, fish and prepared meals, it’s worth taking a quick look at the date and condition. If something smells odd or already looks questionable, even the best freezer won’t fix it.

Practical everyday examples

A typical case: on Sunday there’s a large piece of roast left over. After eating, it cools down to room temperature, then it’s wrapped in thick aluminium foil, as airtight as possible. For one to two months in the freezer, that’s perfectly fine - as long as the meat isn’t heavily marinated or intensely seasoned. Later it defrosts in the fridge, then goes into a pot or frying pan - with no microwave step while still in foil.

Another scenario: a big pot of tomato sauce is still half full. Here, aluminium foil in direct contact with the sauce is the wrong choice. Better: portion the sauce into several small containers, let it cool, put the lids on, and freeze. If you’re worried about odours in the freezer, you can then place the containers inside a freezer bag or wrap them with a strip of foil - without aluminium touching the sauce.

Once you adjust your routine, it becomes clear: aluminium foil stays handy for some uses, such as bread or dry baked goods. For anything spicy, acidic or extremely salty, other options are a much better fit. That not only reduces the risk of increased aluminium intake, it also cuts down on freezer chaos - and means fewer mysterious blocks of ice end up in the bin.
